In a town that takes its coffee seriously, Bohemian Roastery (BoRo) is quietly doing something radical. No flashy café, no daily walk-ins. Just a family-run roastery and a growing presence on local shelves. What they’re offering feels less like a trend and more like a shift.
Here, coffee is roasted over a wood fire in small, eight-pound batches. Not as a throwback, but as a rethink. BoRo is one of only a few committed roasters in the U.S. using this ancient method instead of petroleum-fired heat. Founder-driven and engineer-minded, the operation leans into the natural properties of hardwood, particularly its moisture content, to shape the roast. That subtle infusion of water vapor creates a gentler, more enveloping heat. The result lands in the cup as something notably smoother, with rounded acidity and more integrated flavor.
Anchored by responsibly sourced, organic beans, the lineup ranges from the lighter Ethiopian Yirgacheffe to the darker Vietnamese Robusta, with honey, sesame, and cacao flavors. There are also intriguing coffee/mushroom blends that feel very much at home in Central Oregon’s wellness-meets-adventure ethos. While the roastery itself is not open to the public, you’ll find their beans at Central Oregon Locavore, Newport Avenue Market, and Local Acres Marketplace, among other retail outlets throughout the area, plus a steady rotation of summertime farmers’ markets and special events year-round.
