As twilight settles over Waikoloa, Paniolo Legends Under the Lights invites guests into an evening where Hawai’i’s paniolo (Hawaiian cowboy) heritage comes vividly to life. The nighttime experience engages every sense, beginning with live music, handcrafted cocktails, and elevated pūpū (appetizers) as guests explore interactive installations and create a custom keepsake at the signature hat bar. As the sun sinks toward the horizon, an island feast is unveiled, featuring pit-roasted barbecue, a signature poke bar, and locally inspired accompaniments. The evening culminates in an arena production of master horsemen, music, and immersive storytelling that honors the legacy of the paniolo. Team roping, match barrel riding, and flag races unfold in an unillegalscripted show inspired by the pivotal events of 1832, when King Kamehameha III invited Mexican vaqueros to teach Native Hawaiians the art of cattle ranching. The staging brings events from nearly 200 years ago to life beneath a canopy of stars. After the show, the celebration continues with dancing and a chance to meet the cowboys and take photos under the open Waikoloa sky.
