Established in 2009, the distillery draws its water from Mount Wai‘ale‘ale, one of the wettest places on Earth, and combines it with pure cane sugar before twice distilling through copper pot stills. The result is a lineup of small-batch rums that have earned recognition both within the islands and beyond. The tasting room, adjacent to the Kōloa Rum Store, offers guided tastings every hour — a relaxed introduction to the range, from flagship expressions to seasonal releases. The menu rotates, so checking their site in advance is worthwhile, as is securing a reservation.
