Hotel Wailea, Maui’s sole adults-only, Relais & Chateâux escape, has recently added an exciting dining experience, The Chef’s Table. The luxury boutique hotel has opened its custom Hestan kitchen—which was renovated French Laundry-style to be able to view the chefs in action— to guests looking for an interactive, unique dinner service. Guests dine in the kitchen for a front-row seat of the culinary team in action, where they are served a specially curated five-course menu prepared by culinary director Chef John Taube IV and Sous Chef Conor Repogle Jr. Relais & Chateâux properties are focused on local ingredient sourcing and sustainability, and this Hotel Wailea experience is no different. The hotel has tapped local farmers and fishermen for the freshest ingredients, sourced directly from the island, to create an evolving, seasonal menu. Recent standouts have included dishes like Risotto with Shimeji, maitake, and basil pistu; Onaga: Maine Lobster, charred green onion, smoked trout roe; and A5 Snake River Farm Ribeye with Kulia carrot and black garlic. An optional wine pairing can be added to dinner to take advantage of the luxury resort’s three advanced sommeliers and the largest wine program in the state. Groups of up to eight people can book the Chef’s Garden Table to dine al fresco in a private outdoor patio, or those looking for a more private experience can book the property’s iconic treehouse for a 7-course meal equipped with a private chef and server.
