On the ground floor of SALT at Our Kaka‘ako, in the storefront that once housed Hank’s Haute Dogs, dinner unfolds as an elegant parade of artistry. Paris.Hawaii marks a remarkable transformation, replacing casual comfort with French-inspired fine dining and impeccable design. Chef Yuya Yamanaka’s seasonal prix fixe menu is a thoughtful dialogue between classical French technique and Hawai‘i’s land and sea, translating local ingredients into refined, expressive dishes. Trained in Paris, the 2026 James Beard Award semifinalist also crafts business-class meals for Japan Airlines.
The menu is reimagined every two months, with individual dishes occasionally changing based on the season and the availability of the freshest ingredients. The result rewards repeat visits, offering something new while remaining rooted in Chef Yamanaka’s distinctive culinary philosophy.
With its intimate, counter-only seating, Paris.Hawaii blurs the line between kitchen and dining room. Guests have a front-row seat to the creative process, watching each course come together before it arrives at the counter like the next piece in a carefully curated exhibition. Paired with gracious, attentive service that is both polished and genuinely warm, the evening feels choreographed without ever losing its sense of hospitality.
The restaurant’s understated interior mirrors the simplicity of each composed plate. Dark, spare, and quietly luxurious, the space recedes so each course can come forward. Against that backdrop, vibrant colors, sculptural plating, handmade ceramics, and bold island flavors arrive. Every dish resembles an artist’s palette, each composition balancing visual drama with technical precision.
